As you're indulging in that slice of pumpkin pie today, remember that pumpkin is one of nature's "superfoods."
It's high in fiber with an abundance of disease-fighting nutrients, including potassium, pantothenic acid, magnesium, and vitamins C and E. Pumpkin also contains carotenoids, which have been linked to a host of health- promoting and disease-fighting activities.
